Gingersnaps

2 1/2 cups all-purpose flour
1 1/2 tsp ground ginger
1 tsp baking soda
1 tsp allspice
1/2 tsp salt 1
1/2 cups sugar
2 TBSP oil
1/2 cup unsweetened applesauce
1/4 cup molasses

Preheat oven to 375* F. Spray cookie sheet with nonstick cooking spray.

In medium bowl, mix together flour, ginger, baking soda, allspice and salt. In large bowl, beat sugar and oil with mixer at medium speed until blended. Whisk in applesauce and molasses. Add flour mixture to applesauce mixture; mix until well blended.

Roll dough into 1" balls and place 2" apart on prepared cookie sheet.

Bake 12-15 minutes or until firm. Cool completely on wire rack. Store in air-tight container.
