Potato and Leek Soup

Whilst skiing one year, Scotty and AJ found a leek at the tiny supermarket.
'You can make soup out of that can't you?' they said... and this is what they came up with...
2 very large potatos
1 large leek chopped very fine - not much of the green stuff
1 chicken stock cube
Chop potatos into smallish chunks. Boil until really soft.
Pour off water and mash, yes with a potato masher, in the pot.
Add water (not too much, you can always add more as you go).
Add everyting else except the milk.
Simmer, stiring occasionally for approx. 40 mins.
Stir in milk until it's warmed through.
Serve with hot crusty bread and butter!
