Mock Cream

Cook: Marian Cummins

Particluarly good for banana cake.

1 tbsp milk
2 tbsp water, plus 1 tbsp
1/2 cup sugar
1/2 tsp gelatin
125g butter
1/2 tsp vanilla

Combine milk water & sugar, stir over low heat 'til sugar dissolves. Do NOT boil!
Add gelatine to extra water, add to above stuff, stir to dissolve, cool until lukewarm (if that makes sense...).
Beat butter and vanilla until white and fluffy. Gradually beat in sugar mixture until fluff and quite cold (10-15 mins in electirc mixer).
Will thicken on standing.
