Anzac Biscuits

Anzac biscuits are traditionally baked for Anzac day when Australians remeber the brave lads who fought in the wars (Australia and New Zealand Army Corps).
Personally - I can't wait! These are my all time favourite biscuits.
Cooking them a little longer makes them crunchy - everyone has their own preference on this.

1 cup rolled oats
1/2 cup SR flour
1/2 cup plain flour
3/4 cup decimated coconut (just kidding)
3/4 cup sugar
1/2 tsp bicarbonate of soda
2 tablespoons boiling water
125g butter
2 tbsps golden syrup

Mix all dry ingredients.

Melt butter in a small saucepan - turn off heat and stir in sugar. I find this helps to melt the crystals as I always use raw sugar.
Add Golden Syrup. Dissolve soda in water and add to the sticky mix.

Mix everything together well. Plop spoonfuls onto a greased tray.

Bake 160o for 15 mins.
