Blend the cheddar cheese, garlic and parsley into the cream cheese, it will be easier if the cream cheese is at room temperature.
Flatten the chicken breast by gently pounding between greaseproof paper.
Place the ham on the chicken breast and the mushrooms on top of the ham. Spoon 2 tablespoons of the cheese mixture onto the top and roll the chicken around the filling, folding in the ends to make a neat package. Wrap the chicken parcel in a sheet of puff pastry, trimming the pastry and sealing the edged well.
Bake at 180 celcius for approximately 35 minutes. Lower the temperature of the oven if the pastry starts to brown too quickly.
For special occasion presentation I make a lattice of pastry strips on a sheet of greaseproof paper then lay another pastry sheet on top of it. When the pastry is wrapped around the chicken parcel the lattice will be on the outside. I pinch and crimp the cut edge and place the edge uppermost in the oven.
