Bruschetta

Cook: Amanda Penrose

Baguette (French breadstick)
Olive oil (extra virgin is best)
Tomatoes
Minced garlic
Fresh basil
Salt and pepper

Slice the baguette diagonally into very thick slices.
Fry slices on both sides in a little oil.

Chop tomatoes. Mix in a bowl with torn basil leaves, garlic, salt, pepper and oil.

Place tomato mix on toasted baguette and serve immediately.
