Prunes in Port
Cook: Amanda Penrose
One big jar
Lots of dried, pitted prunes
A bottle of port (I've used Swords port with success)
Spices e.g. cinnamon and nutmeg

Fill jar with prunes.
Mix spices into port.
Top up the jar with the port (sounds like that joke about the stones and sand doesn't it?).
Wait (this is the hard part) for a couple of months until the port has gone syrupy and pruney and the prunes are deliciously soft.
SOOOO good, especially when served with strong cheese :-)
