Seafood Couscous

Peeled prawns
1 tsp garlic
Knob of butter
Pine nuts
Snow peas
A handful of fresh dill
Lemon juice
Diced red onion
Diced avocado
Diced tomato
Balsamic vinegar

Cook the couscous.
Place butter into a frying pan. When hot, add prawns and stir until they are cooked. This should only take 3-4mins.
Combine avocado, tomato and red onion to make a salsa.
Chop snowpeas into 2cm bits.
Mix everything together with a big dash of lemon, a good handfull of dill, and a sprinkle of coriander.
Sprinkle pine nuts over the top.
