Carrot Cake #2

3 eggs, separated
1 cup sugar
1&1/2 cups plain flour
1 tsp baking powder
1 tsp cream of tartar
1&1/2 cups carrot, finely grated
1/2 cup crushed walnuts
Vanilla

For frosting:
1/2 cup butter
1 cup icing sugar
1/2 cup cream cheese
Pinch of cinnamon

Preheat oven to 350 degrees F (180 degrees C) and place rack in center of oven.
Butter or spray two 9x2inch (23x5cm) cake pans and line the bottoms of the pans with a circle of parchment paper.
Beat the egg whites & cream of tartar until creamy, then leave it!
Beat the egg yolks, sugar and vanilla until they change colour, the add the grated carrots and walnuts.
Mix the flour and baking powder together. Add to the egg yolk mixture and then fold the egg whites into the dough.
Bake for 30 to 40 minutes.

For frosting: Beat the butter, sugar and cream cheese until soft and fluffy. Decorate your cake with cinnamon. Enjoy it!!!!!!
