Banana bread

Cook: Amanda Penrose

2 cups self-raising flour
1 tsp cinnamon
3/4 cup brown sugar
1/2 cup milk
2 eggs
50g melted butter
2 over-ripe mashed bananas

Mix dry ingredients. Make a well in the centre and add wet ingredients. Stir until mixed well, but don't over-do it.
Place in a bread tin that has been lined with greased baking paper.
Bake in 180°C oven for about 45 minutes, until an inserted knife comes out clean. Cool on a wire rack before eating.
