French Island Roast

Cook: Scott Penrose

Chicken breast
Bacon
Onion
Bread crumbs
Grated carrot
Garlic - dried flakes will do
Salt and pepper
Silver beet leaves chopped
Egg
Butter
Lemon juice

Flattened the chicken breast with any old heavy (clean) bottle
Chop up the bacon and onion and fry.

Mix together everything except the chicken. Spoon the mixture into the middle of the chicken. Roll them up and bake them until the chicken is cooked through.
