Ganny's Fruit Cake

This makes a BIG cake. You may want to halve, or even quarter, these quantities.
1 lb butter
1 lb brown sugar
8 eggs (8!!! told you it was big!)
1/2 cup brandy
1 lb currants
1 lb sultanas
1 lb raisins
1 lb plain flour
1/4 lb sr flour
6 oz blanched almonds
4 oz cherries
2 oz mixed peel
2 cups milk (maybe a little bit more)
Traditionally all family wedding, 21st and Christmas cakes have been made from this recipe - including Scotty and Amanda's wedding cake!
Soak fruit in brandy overnight.
Cream butter and sugar - add eggs one at a time.
Mix well. Add fruit alternately with milk and flour.
Bake in a lined tin, approx. 11" by 11" at 325o - then at 275o - cook for 3 1/2 to 4 hours.
