Carrot Cake

1 cup of oil (cooking or vegetable)
2 cups of sugar
1 teaspoon cinnamon
1 teaspoon mixed spices
1 teaspoon salt
3 cups grated carrots
4 eggs
1 teaspoon bi-carb of soda
1 teaspoon baking powder
1 packet walnuts (optional)
2 cups of plain folur
Vanilla essence

125 grams of cream cheese
30 grams of butter
1* cups of icing sugar

Mix together all dry ingredients.

Beat sugar, oil, vanilla essence and eggs. Add to dry ingredients.

Add carrot last.

Grease and flour tin. Cook 180o for an hour.
